What is this “Paleo” business you speak of?

The Paleo diet, popularized in the US by Dr. Loren Cordain, posits that humans are adapted to eat the kinds of food that were available during the most formative period of human evolution. More importantly, research into this area indicates that modern Western diets consisting of foods that we’re not adapted to – like wheat and other grass seeds, dairy in adulthood, and even legumes – are in fact really harmful to our health, and are directly implicated in a host of health problems known collectively as Western diseases. The list of Western diseases is probably really familiar to you: heart disease, stroke, obesity, diabetes, autoimmune diseases, etc. These diseases are virtually unknown in populations that still eat the way Paleolithic hunter-gatherers ate. Many people who switch to the Paleo diet, or a version thereof, experience some sort of dramatic health improvement. Just sayin’.

How can pasta be Paleo? What’s in your Paleo Pasta?

Glad you asked! The ingredients in our Paleo Pasta, in descending order, are: almond flour, arrowroot powder, pumpkin powder, quinoa flour, egg whites, inulin, and xantham gum. We know that the presence of quinoa and xantham gum might raise some Paleo eyebrows, but hey: it’s a tiny bit of quinoa, less than 10%, and since it’s a finely milled flour, there’s a much, much lower concentration of the saponins that can be a cause of concern with quinoa. And since we use inulin, which is a naturally occurring fiber, we can get away with an extremely tiny bit of xantham gum.

All that said, the idea behind Paleo Pasta is to make it easier to stick to a healthier diet. Try it out! You’ll see what we mean.

What do you mean, “gluten free”? What about other allergens?

We don’t use any gluten! Currently we make our pasta in a mixed use facility, although we use a specifically designated, physically separated gluten-free area. Still, we’re careful: we test every batch for the presence of gluten using these fancy-shmancy testing kits. We really, really don’t like gluten. We don't use any wheat, peanuts, or dairy, and we use our own specially designated equipment, but we do make our pasta in a facility where those allergens may be present.

How should I cook Paleo Pasta?

Bring some water to a rolling boil. Put your pasta in it for 2:30-3:00 minutes, and then take it out right away. Done! Be careful not to overcook it, or it won’t be as yummy.

How long does Paleo Pasta stay yummy?

Since it’s a dried product with low water activity, a while. Since it’s got a lot of almond flour in it, which has a higher fat content than wheat flour, less than traditional dried pasta. We recommend eating it within 6 months, and storing it in a cool, dry place. If you keep it in a really hot, sweltering place, the almond oil might start to turn before that.
